Coffee Maple Granola
Ingredients:
2/3 cup Embark Coffee Maple
1/3 cup coconut oil (butter or olive oil can sub)
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1 teaspoon ground cardamom
1 teaspoon vanilla extract
3 cups old fashioned rolled oats
1 cup sliced almonds
1 cup pepitas/ pumpkin seeds
1 cup flaxseed
2/3 cup sweetened or unsweetened coconut flakes (or no coconut if you’re not a fan)
Instructions:
Heat oven to 300 degrees F. (150 degress C). Line a baking sheet with parchment paper.
Slowly melt the coconut oil on the stove top. Stir in maple syrup, vanilla and spices. Stir on low until oil is completely melted.
Combine your dry ingredients in a large mixing bowl.
Pour in your wet ingredients and mix it up until everything is combined.
Spread out your granola mix evenly onto your parchment paper and press down flat with a spatula. Put it in the oven for about 35 minutes, or until the top is a light golden brown.
Take it out of the oven and let it cool completely. Once it’s completely cooled, use your hands to break it up into large chunks for snacks, or crumble into a topping for yogurt, ice cream or on its own!
Notes:
A great thing about granola is how customizable it is! Use these guidelines and make it your own:
Spices: 3 tsp total- try nutmeg, allspice, etc.
Nuts, Seeds & fruits: 3 C total- Walnuts, pecans, cashews, sunflower seeds, the choice is yours! When using dried fruit, wait until the final 10 minutes to add them.
