Salted Maple Muffins

We’re a team of muffin lovers. We make them for aid station snacks, meeting snacks, lunch snacks, hiking snacks….muffins are our snack, and sometimes our lunch. These Brown Sugar Maple Muffins are super easy to make, and are deliciously dense to keep you going longer. This recipe makes 12:

Preheat your oven to 400 F.

Line your muffin tin with either liners or parchment paper.

Combine all of these ingredients in a bowl and mix:

  • 1 cup of milk (we used whole)

  • 2 cups of rolled oats

  • 3/4 cups of Salted Maple Embark (we actually measure with our heart, you can always add more ;)

  • 1/3 cup of oil (we used what we had on hand, vegetable oil)

  • 2/3 cup of brown sugar

  • 2 large eggs

  • 1.5 cups of flour (we used whole wheat flour)

  • 1 teaspoon of baking powder

  • 1 teaspoon of cinnamon

  • 1 teaspoon cardamom

  • A couple shakes of salt

    Bake for about 21 minutes or until the top springs back up when you (gently) push it down. Let them cool and eat em up! The only thing I would do differently is add more cinnamon and more cardamom, maybe even some ginger! I also made an icing to put over the top. I used:

  • 1 cup of powdered sugar

  • 1 tablespoon of milk (keep adding in more to make it thinner, if that’s how you like it)

  • 1 tablespoon of Embark Coffee Maple (add in more to taste!)

They’re dense, they’re subtle, they’re delicious. And most importantly, they’re ready for adventure!
