Granola Clusters

Smothered in Embark maple and sprinkled with all your favorite spices, these granola clusters are addicting, and poppable! Top off your yogurt or smoothie bowls, dip them in your favorite nut butters, or just eat them plain.

Ingredients

  • 2/3 cup Embark Maple (Elderberry, coffee, or salted, your choice!)

  • 1/3 cup coconut oil (butter or olive oil can sub)

  • 1 teaspoon fine sea salt

  • 1 teaspoon ground ginger

  • 1 teaspoon ground cinnamon

  • 1 teaspoon ground cardamom

  • 1 teaspoon vanilla extract

  • 3 cups old fashioned rolled oats

  • 1 cup sliced almonds

  • 1 cup pepitas

  • 1 cup flaxseed

  • 2/3 sweetened or unsweetened coconut flakes (or no coconut if you’re not a fan)

You can sub or add in any of your favorite nuts and seeds. Add in chocolate chips, nut butters, or dried fruit. The possibilities are endless! If you are adding nut butters, melt them down with your wet ingredients. Chocolate chips and fruits can be added right into your dry mixture.

Step 1: Heat oven to 300 degrees F. (150 degress C). Line a baking sheet with parchment paper. I tried aluminum foil, and while it did work for the most part, some of the granola stuck to the foil. It’s a good second option in case you don’t have parchment paper handy.

Step 2. Heat up your wet ingredients and spices. Slowly melt the coconut oil, maple syrup, and vanilla on the stovetop and add in the ginger, cinnamon, and cardamom and salt. Heat on low-medium heat until the coconut oil is completely melted, stirring in the spices.

Step 3. While your wet ingredients are heating up, combine your dry ingredients in a large mixing bowl. Once melted, pour in your wet ingredients and mix it up until everything is combined.

Step 4. Spread out your granola mix evenly onto your parchment paper and press down flat with a spatula. Put it in the oven for about 35 minutes, or until the top is a light golden brown.

Step 5. Take it out of the oven and let it cool completely, this is how you’re going to get those savory chunks. Once it’s completely cooled, use your hands to break it up into chunks. Eat, serve, love! I store my granola in ball jars right on my counter, I can’t help but eat it quick. It will store in jars for up to four weeks!
