Elderberry Maple Orange Energy Balls

Looking for the perfect snack? We got you covered! Elderberry Maple and Orange Energy Balls hit all the right spots and are wonderfully portable for all your outdoor adventure needs. These ones in particular don’t look like much but they pack a flavor punch! There are a lot of recipes online but here is how we made ours:

In a large mixing bowl add:

1 cup of rolled oats

Half a cup of peanut butter

Quarter cup of Embark Elderberry Maple

Quarter cup of mixed seeds: hemp, chia, and flax

Quarter cup of shredded coconut flakes

Juice of one large orange

Mix together until everything is combined. If it doesn’t seem sticky enough you can add more peanut butter. Roll into bite sized balls (or use a melon ball scooper if you have one) place on parchment paper lined cookie sheet and stick in the fridge overnight to harden up. This recipe made about 12 bigger balls, you can make them as big or as small as you would like!

We really measured with our heart for these energy balls. You can add anything you want, you can roll them in pistachio dust or more coconut flakes! You can add chocolate chips or fruit pieces, or different types of nut butters. These are the perfect snacks to experiment with and make your own.
